Tableaux are very old, dating back at least to the Renaissance, and flash mobs are a recent phenom, but the first person who answered is technically correct. Tableaux and flashmobs are not the same thing, they just happened to overlap in this situation. Tableaux can be done for anything to a few seconds to hours. Flashmobs usually show up, without public announcement, engage in some activity without obvious direction, then leavel. So - both terms take in a lot more than the situation you described, where they both come together.
